  1. Shell shrimp
  2. Leaving tail segment
  3. Butterfly shrimp & remove vein
  4. Wash under cold water & pat dry
  5. Preheat oven to broil
  6. Melt butter in shallow dish that is large enough to hold shrimp in 1 layer
  7. Do not let butter brown
  8. Stir in olive oil
  9. Lemon juice
  10. Garlic
  11. Salt
  12. Pepper
  13. & shrimp
  14. Turning until they are cocated with sauce
  15. Broil 3 - 4 inches from heat for 5 minutes
  16. Turn over & broil 5 minutes more or until lightly browned
  17. Do not overcook
  18. Sprinkle with parsley & garnish with lemon quarters
