superfoods tuscan bean soup


from the superfoods rx diet book. if you don't want to take the time for dried beans, alternative for canned is posted as a note.

  1. Placed washed
  2. Dried beans in a stockpot with 4 cups water
  3. Bring to a boil
  4. Cook for 2 minutes over medium heat
  5. Turn off the heat
  6. Cover
  7. Allow them to soak for 1 hours
  8. Drain beans thoroughly
  9. Return them to the stockpot
  10. Cover with 3 cups of fresh water
  11. Bring to a boil and reduce heat to medium
  12. Simmer for 30 - 40 minutes or until beans are done
  13. Skim off any foam that develops
  14. During last 10 minutes of cooking
  15. Heat oil in a large skillet over medium heat
  16. Add onions and garlic
  17. Stirring constantly
  18. Cook for 3-4 minutes or until the onions are nicely browned
  19. Add entire contents of skillet to stockpot and remove from heat
  20. With immersion blender
  21. Puree the soup
  22. Adjust thickness with water if necessary
  23. Stir in sage
  24. Cover and let stand 10 minutes before serving
  25. Puree it in batches in the regular blender
  26. Return soup to stockpot and gently reheat
  27. 5 oz can of drained and rinsed beans instead of the dried ones
  28. Just begin recipe at step 3
  29. Use 1 / 2 t

  31. Snipped sage
