super quick brown rice with asparagus chickpeas and almonds

Desciption

discovered on heidi swanson's "101 cookbooks" website, i adapted to add a little more flavor punch. this has been a crowd-pleaser many times over, even with people who "don't like asparagus!" it's tasty served at any temperature, making it a great addition to a potluck meal.

Steps

  1. "pop trader joes frozen brown rice in the microwave
  2. Or make a batch of rice the traditional way"
  3. While rice is cooking
  4. Make the dressing by whisking together half of the chopped garlic
  5. Tahini
  6. Lemon zest
  7. Lemon juice
  8. And 3 tbs
  9. Olive oil
  10. Add the hot water to thin a bit
  11. And then 2 teaspoons salt
  12. Set aside
  13. Add 3 tbs
  14. Olive oil to a big skillet over medium-high heat
  15. Swirling to coat the pan
  16. "be sure the chickpeas are completely dry
  17. Or theyll spit at you during this next step !"
  18. Add the chickpeas and a sprinkling of salt
  19. Let the beans saute for a couple minutes
  20. Until they get a toasty little crust on them
  21. Add remaining garlic and onions
  22. Stir for a minute
  23. Stir in the asparagus with another pinch or two of salt
  24. Then cover with a lid for a minute to steam until the asparagus softens a touch
  25. Uncover and stir in the rice and almond slivers
  26. Reserving a few almonds for garnish
  27. Adjust seasonings
  28. Adding more salt if needed
  29. Serve family-style in a big bowl drizzled with a few tablespoons of the tahini dressing
  30. Letting each person add more dressing to their tastes
  31. Watch as this magical concoction disappears before your eyes !
