Steps

  1. Begin by spraying the bottom of a large pot with pam
  2. Take the onions and garlic and cook until translucent
  3. In a separate pan
  4. Saute the eggplant until lightly browned on all sides
  5. Add a small amount of water to the eggplant and cover
  6. Simmering
  7. For five minutes or until soft
  8. Add the tomato and carrot to the garlic and onion
  9. Stir and add 1 / 2 cup of water
  10. Add other vegetables
  11. Cover and simmer until the eggplant is ready
  12. Add the eggplant
  13. And the spices
  14. To the pot
  15. Cover and simmer until the vegetables are soft and spicy
  16. Great with rice
  17. Quinoa
  18. Or as a meal alone !
