super good pumpernickel bread

posted per board request. recipe from fleischmann's bake-it-easy yeast book. this is a very tasty pumpernickel recipe. makes 3 nice round loaves. i've made it for years, and it turns out good every time. enjoy! (prep. time includes kneading, resting, and rising times)

Steps

  1. Combine white and rye flours
  2. In a very large bowl
  3. Thoroughly mix 2 cups flour mixture
  4. Salt
  5. Cereal
  6. Cornmeal
  7. And undissolved yeast
  8. Combine water
  9. Molasses
  10. Chocolate
  11. And margarine in a saucepan
  12. Heat over low heat until liquids are very warm
  13. Margarine and chocolate do not need to melt
  14. Gradually add to dry ingredients and beat 2 minutes at medium speed of electric mixer
  15. Scraping bowl occasionally
  16. Add potatoes and 1 cup flour mixture
  17. Beat at high speed 2 minutes
  18. Scraping bowl occasionally
  19. Stir in caraway seed and enough additional flour mixture to make a soft dough
  20. Turn out onto lightly floured board
  21. Cover and let rest 15 minutes
  22. Then
  23. Knead until smooth and elastic
  24. About 15 minutes
  25. Place in greased bowl
  26. Turning to grease top
  27. Cover
  28. Let rise in warm place
  29. Free from draft
  30. Until doubled in bulk
  31. About 1 hour
  32. Punch dough down
  33. Let rise again 30 minutes
  34. Punch dough down
  35. Turn out onto lightly floured board
  36. Divide into 3 equal pieces
  37. Shape into round balls
  38. Place in 3 greased 8 or 9 inch round cake pans
  39. Cover
  40. Let rise in warm place
  41. Free from draft
  42. Until doubled in bulk
  43. About 45 minutes
  44. Bake at 350f
  45. About 50 minutes
  46. Or until done
  47. Remove from pans and cool on wire racks
