stuart anderson s black angus baked potato soup


this is my favorite potato soup recipe - very easy and quick. i always end up at least doubling the recipe and there's never much left! i think i must have found this recipe in a newspaper somewhere, but i'm not sure!

  1. Melt butter on medium heat
  2. Add onion and saute for 2 minutes
  3. Being careful not to brown the onions
  4. Sprinkle flour over the onions and cook about 5 minutes
  5. Stirring often
  6. Gradually add chicken broth
  7. Add potatoes
  8. Salt
  9. Basil
  10. White and black pepper
  11. Tabasco and garlic salt
  12. Bring to a boil
  13. Reduce heat to low and simmer 20-25 minutes
  14. Or until potatoes are tender
  15. Stirring occasionally
  16. Stir in half& half
  17. Heat through
  18. Garnish with grated cheddar cheese
  19. Cooked& crumbled bacon
  20. A dollop of sour cream and finely sliced green onion
