berghoff s creamed spinach


the famous berghoff's restaurant, in chicago, closed it's doors this past week after 107 years in business. their recipes were a closely guarded secret but they did share the ingredient list for their famed creamed spinach. the chicago tribune food editors played around with the list and came up with this recipe, which tastes exactly like the spinach at the restaurant.

  1. Melt the butter in a medium skillet
  2. Add the onion
  3. Cook over medium heat until tender
  4. 5-6 minutes
  5. Stir in the flour
  6. Cook 1 minute
  7. Stirring constantly
  8. Whisk in the milk
  9. Cook
  10. Stirring often
  11. Until mixture comes to a boil and thickens
  12. Stir in the chicken base
  13. Salt
  14. Nutmeg and pepper
  15. Set aside
  16. Squeeze the thawed spinach to remove as much water as possible
  17. Add the spinach to the cream sauce
  18. Mix well
  19. Cook until spinach absorbs some of the sauce
  20. About 5 minutes
