Steps

  1. Remove skin from chicken
  2. Rub with salt and pepper
  3. Place chicken in large skillet with melted butter
  4. Brown on all sides
  5. Pour broth over browned chicken
  6. Add sherry
  7. Cover
  8. Reduce heat to low
  9. Simmer 35 to 45 minutes or until chicken is tender
  10. Use slotted spoon to place cooked chicken on a platter
  11. Keep warm
  12. Add cup chopped parsley and cream to drippings in pan
  13. Simmer
  14. Cook and stir sauce until about 1 cup remains and has a glazed appearance
  15. Stir in cheese only until melted
  16. Pour sauce over chicken
  17. Garnish
