  1. In a heavy saucepan
  2. Toast the following ground spices together over a low heat for 4 to 5 minutes: ginger
  3. Cardamom
  4. Coriander
  5. Fenugreek
  6. Nutmeg
  7. Cloves
  8. Cinnamon and allspice
  9. Shake or stir to prevent burning
  10. Add the salt
  11. Cayenne pepper
  12. Paprika and fresh ground black pepper and continue toasting and stirring for 10 to 15 more minutes
  13. Cool and store in tightly covered glass jar
