Steps

  1. Heat a dry frying pan until hot
  2. Add the coriander and caraway seeds and cook for 1 minute
  3. Shaking the pan from time to time
  4. Until fragrant
  5. Transfer the spices to a plate and allow to cool then crush to a powder using a mortar and pestle
  6. Heat the oil in the frying pan
  7. Add the carrots and saut gently for about 10 minutes
  8. Turning occasionally
  9. Until lightly browned all over
  10. Add the ground spices and cook
  11. Stirring for 1-2 minutes
  12. Add the vinegar and salt and continue to cook for a further 5 minutes
  13. Stirring from time to time
  14. Until the carrots are tender
  15. Serve hot or at room temperature
