  1. Melt 1 / 2 cup plus the 2 tsp of butter along with the crushed garlic in a sauce pan
  2. Add parsley
  3. Lemon juice and season with salt and pepper
  4. Pour into a small container and refrigerate til solid
  5. When ready to cook
  6. Trim beef tenderloin of unnecessary fat
  7. "the tenderloin should be about 1 inch thick
  8. So if its too thick
  9. Pound to flatten"
  10. Melt 2 tablespoons of prepared butter and coat over the surface of the meat
  11. Season with black pepper
  12. Preheat grill
  13. Place the tenderloin on hot grill and sear on each side for about 4 minutes
  14. Reduce heat and continue grilling until it reaches the desired doneness
  15. Remove from grill and slice into 1 / 2 inch thick slices
  16. Serve garnished with watercress and the butter mixture
