Steps

  1. Peel the cucumber
  2. And remove the seeds
  3. Place in a food processor and pulse about 5-6 times until minced
  4. Transfer cucumber to a small mixing bowl
  5. Chop onion in chopper or food processor
  6. Until finely minced
  7. Add to cucumber
  8. Add cream cheese
  9. Salt
  10. Food coloring and tabasco
  11. Combining well
  12. With a biscuit cutter
  13. Cut rounds out of bread slices
  14. Spread a small amount of mayonnaise on bread rounds
  15. Top with cucumber mixture
  16. Spreading to edges
  17. Top with additional bread round
  18. Garnish with parsley or other herbs as desired
