here's another terrific cookie recipe from my friend bella, who is the world's greatest baker (in my opinion!). prep time doesn't include chilling time (there are 3 different options for the chilling)

  1. On waxed paper
  2. Combine flour
  3. Baking powder and salt
  4. In a large bowl
  5. With mixer at medium speed
  6. Beat butter and sugar until creamy
  7. Occasionally scraping bowl with rubber spatula
  8. Beat in vanilla
  9. Then egg
  10. At low speed
  11. Gradually add flour mixture
  12. Beat just until blended
  13. Occasionally scraping bowl
  14. With spoon
  15. Stir in pecans
  16. Shape dough into a 12" by 3 3 / 4" by 1" brick
  17. Wrap brick in plastic wrap and refrigerate at least 6 hours or overnight until firm enough to slice
  18. Or place brick in freezer about 2 hours
  19. Preheat oven to 350
  20. Grease a large cookie sheet
  21. With sharp knife
  22. Cut brick crosswise into 1 / 8-inch thick slices
  23. Place slices
  24. 1 inch apart
  25. On cookie sheets
  26. Bake cookies 12-14 minutes or until lightly browned around edges
  27. Transfer cookies to wire rack to cool
