bell alimento bolognese sauce


i made this recipe from paula of the blog bell'alimento. it's so yummy you should try it : http://www.bellalimento.com/2009/11/10/bolognese-sauce/ i don't really know the number of serving. but i got 2 jars of this sauce.

  1. In a large deep sided pan add your olive oil and heat over medium heat
  2. When pan is hot
  3. Add the carrots
  4. Celery
  5. Onion & garlic and saute over low heat for 20-25 until completely soft & tender
  6. Stir as necessary
  7. Add your meats
  8. Season with salt and pepper and cook until completely brown
  9. When meat is browned
  10. Add the tomato paste and allow to brown
  11. Approx 5 minutes
  12. When brown add your wine & allow to reduce by half
  13. Season with salt
  14. When wine has reduced add in enough water to cover the sauce by 1″
  15. Let sauce simmer on low
  16. Stirring occasionally and when liquid levels are low add more water
  17. Cooking & reducing all while simmering
  18. Sauce needs to cook for a minimum of one hour but is best after 2-3 or even more hours
  19. Prepare your spaghetti according to package directions
  20. When pasta is al dente
  21. Reserve a bit of pasta water & remove pasta from pot
  22. Drain & transfer into sauce pan
  23. Mix together with tongs so sauce & pasta incorporate
  24. Add a nice handful or two of parmigiano reggiano & serve immediately
