a delicious side dish. these bake perfectly alongside any roast, especially roast chicken. use a large oven tin, add potatoes, and you bake an entire meal in one go. these peppers are also great with grilled meats or roasted on their own, as a side dish -- and this recipe is so quick to prepare!

Steps

  1. Oven: 350 deg f / 180 deg celsius
  2. Wash and dry
  3. Then slice the stem tops off the peppers
  4. Remove the seeds and as much of the ribs as possible
  5. Season very lightly inside with salt and pepper
  6. Peel the tomatoes as thinly as possible
  7. Put a tablespoon of capers and a tablespoon chopped onion into each pepper cavity
  8. And pop a peeled tomato into each one
  9. Add a tiny pinch salt and pepper to each tomato top
  10. And sprinkle over each a 1 / 2 teaspoon sugar
  11. Dribble a tablespoon olive oil over each stuffed pepper
  12. "fit the stuffed peppers into a smallish oven dish so they stand close together and cant fall over"
  13. Add a tiny bit of water to the dish
  14. Otherwise
  15. Bake alongside a roast
  16. With other roasting vegetables
  17. If doing this
  18. Remember that a lemon juice-honey-mustard dressing is great on roasting veggies
  19. And will complement the flavour of the stuffed peppers
  20. Roasting time: about 1 hour
  21. "dont bake until the peppers collapse"
