bell pepper with navy beans

as the only vegetarian in the family, i've had to develop quick meals i can whip up, while everyone else eats their non-vegetarian meal. this is one of my all-time favorites, and is pretty substantial.

  1. Cut pepper into bite-size pieces
  2. Usually
  3. I cut it into strips
  4. And then cut each strip into 3 or 4 pieces
  5. Depending on the length
  6. Spray frying pan with non-stick spray
  7. And add pepper
  8. Add beans
  9. And turn on medium / medium-high heat
  10. Let heat
  11. Then add seasoning
  12. I just shake on the salt
  13. Pepper and garlic powder so that the pepper and beans have a light covering
  14. Add as much basil as desired-- i personally add up to 5 basil leaves
  15. Mix ingredients together
  16. Lightly
  17. Making sure peppers get most of the heat
  18. Add about 1 / 4 cup of water to the mixture
  19. To prevent burning
  20. And let cook for about 10-15 minutes
  21. Or until peppers are tender
  22. Adding another 1 / 4 cup of water about half-way through
  23. Take off heat when any remaining water has completely evaporated-- the more you can cook it without water
  24. The better
  25. Put mixture in bowl
  26. And enjoy
