this is a family tradition when the zucchinis are ready. this soup has won first prize in our local county fair. it's not to strongly zucchini flavored, and has a fabulous italian flavor. i have never found anyone who dislikes this soup, try it you'll see
i love this recipe because you can substitute a lot of the ingredients for the full version or skinny version and they both taste equally great! warning, you'll want to skip the crackers and eat it with a fork. yea, it's that good.
boiled rice is fine but often improves when other ingredients are added.
the mushrooms and zucchini add texture and flavour to this dish.
it is also a lot more colourful, serve with chicken dishes and curries.
this spice paste rubbed under the skin of your chicken pieces really gives this an intense flavor. feel free to use your favorite bottled or home made bbq sauce to baste.
