bell pepper rice bake unstuffed bell peppers


adapted from the "stuffed peppers with tomato sauce" recipe from vegetarian times. this dish has an amazing flavor combination. we use basmati rice cooked with a pinch of time and a bay leaf, i typically omit the celery, and i highly recommend tofurkey's italian sausage for this dish.

  1. Preheat oven to 350f
  2. Heat oil in skillet over medium heat
  3. Saut sausage for 2 minutes
  4. Add peppers
  5. Onion
  6. Celery
  7. Garlic and parsley
  8. And cook about 10 minutes more
  9. Stir in the tomatoes
  10. Thyme and cayenne
  11. And remove from heat
  12. Mix in the cooked rice and 1 / 2 cup of parmesan cheese
  13. Put mixture in a 13x9 dish
  14. Cover dish with foil
  15. And bake 45 minutes
  16. Uncover peppers
  17. And sprinkle the remaining parmesan cheese over the dish
  18. And cook uncovered for an additional 10 minutes
