  1. Cook rice mix according to package directions
  2. Meanwhile mix yogurt
  3. Garlic
  4. And salt and pepper to taste
  5. When rice is almost done
  6. Place a 10- to 12-inch frying pan over high heat
  7. When pan is hot
  8. Add oil and spinach
  9. Stir until leaves wilt
  10. About 2 minutes
  11. Mix in shrimp
  12. Remove from heat
  13. And drain liquid from pan
  14. Enclose tortillas in microwave-safe plastic wrap and heat in a microwave oven at full power until hot and steamy
  15. 45 to 60 seconds
  16. Onto each warm tortilla
  17. Spoon 1 / 4 of the rice
  18. 1 / 4 of the spinach mixture
  19. 1 tablespoon yogurt sauce
  20. And 2 tablespoons salsa
  21. Fold one side of the tortilla over the filling
  22. Then fold the sides over and roll to enclose
  23. Accompany the burritos with remaining yogurt sauce and tomato salsa
  24. To add to taste
