belize beef on spiced potatoes


a friend brought this recipe back after a holiday in belize.


# # # # # # # # # # # # # # # # # # # #


  1. Brown ground beef in large nonstick skillet over medium heat 8 to 10 minutes or until beef is not pink
  2. Breaking up into small crumbles
  3. Pour off drippings
  4. Drain and reserve 1 tablespoon of the tomatoes
  5. Add remaining tomatoes
  6. 1-1 / 2 teaspoons garlic and 1 teaspoon jerk seasoning to beef
  7. Bring to a boil
  8. Reduce heat
  9. Cover and simmer 8 minutes
  10. Stirring occasionally
  11. Uncover skillet
  12. Continue simmering 7 minutes
  13. Stirring occasionally
  14. Season with salt and pepper
  15. Meanwhile cut potatoes lengthwise into 1 / 4-inch thick slices
  16. Pierce in several places with a fork
  17. Dip in cold water
  18. Sprinkle lightly with salt
  19. Pepper and jerk seasoning
  20. Place in single layer on nonstick baking pan
  21. Broil 3 to 6 inches from heat 10 to 12 minutes or until tender and lightly browned
  22. Turning once
  23. Combine topping ingredients and reserved 1 tablespoon tomatoes in small bowl
  24. Season with salt and pepper
  25. Spoon beef mixture over potatoes
  26. Serve with topping
