  1. Cut the potatoes lengthwise into thin strips
  2. About 1 / 3-inch in width
  3. Soak the potatoes in ice-cold water for 1 hour
  4. Drain
  5. And pat completely dry
  6. Heat the oil in a deep skillet to 325f and fry the potatoes
  7. In batches
  8. For 5 minutes
  9. Until they turn golden brown
  10. Drain the frites on fresh paper towels and salt them
  11. Makes 2 large or 3 medium servings
