from "international vegitarian cusine" - a book i saved from my mom's garage sale. my hubby's only comment? he was worried i had undercooked the meat!

Steps

  1. Preheat oven to 350f
  2. Grind walnuts in food processor until they resemble large crumbs
  3. Add rice
  4. Parsley and eggs
  5. Set aside
  6. In a saucepan
  7. Saute celery
  8. Onions and pepper in the oil
  9. When soft
  10. But not brown
  11. Add the tomatoes with juice
  12. The bay leaves
  13. Garlic and spices
  14. Simmer gently for five minutes
  15. Remove bay leaves
  16. Add the rest to the food processor
  17. Blend everything well
  18. Pour into greased loaf pans or baking dishes
  19. Sprinkle with cheese and bake for 45 minutes
  20. You can prepare this the day before up to adding the egg
  21. The next day
  22. Add egg
  23. Sprinkle cheese and bake !
  24. Also enjoy cold in a sandwich with mayo and lettuce
