belgian plum flan


this recipe has been posted for zwt ii & my source is www.recipes4us.co.uk/desserts%20and%20puddings/belgian%20plum%20flan. this recipe wasn't very "post your recipe" friendly as it expressed everything in both metric & us measurements, so i had to make a choice again (time does not include cooling time)

  1. Place water & caster sugar in a lrg saucepan
  2. Bring to a boil
  3. Stirring
  4. Then add plums & mix well
  5. Reduce heat & cook for 5-10 min till plums are just tender
  6. But still intact
  7. Remove from heat & allow to cool
  8. In a lrg mixing bowl
  9. Beat together the granulated sugar & egg yolks till pale & thick
  10. Whisk in the flour till smooth
  11. Gradually add boiling milk in a steady stream
  12. Whisking constantly
  13. Transfer to a saucepan & slowly heat to near boiling point
  14. Stirring constantly
  15. Cont to cook for a further 2 min
  16. Stirring all the time
  17. Remove from the heat
  18. Beat in the butter & vanilla extract
  19. Then stand the saucepan in cold water & cont to stir till cooled
  20. Once cold
  21. Pour the creme into the pastry case
  22. Then arrange the plums in the filled case
  23. The tops of the plums should stand above the crme
  24. Set aside
  25. In a small saucepan
  26. Melt jam w / the lemon juice over a low heat
  27. Mixing well
  28. Brush the apricot mixture over the top of the plums to glaze them
  29. Then refrigerate to get completely cold before serving
