belgian meatloaf


i believe this recipe comes from everybody eats well in belgium -- it makes for an interesting loaf!

  1. Preheat oven to 450 degrees f
  2. & brush a meatloaf pan with 1 teaspoon melted butter
  3. Soak bread crumbs in 3 / 4 cup milk
  4. In medium skillet
  5. Melt the 3 tablespoons of unsalted butter
  6. Then add onion & saute 2 minutes
  7. Add mushrooms & saute 5 minutes
  8. Add garlic & saute 1 minute
  9. In a mixing bowl
  10. Add ground beef & egg
  11. Then squeeze bread crumbs dry & add to bowl
  12. Add onion mixture
  13. Parsley
  14. Sage
  15. Oregano
  16. Thyme
  17. Salt
  18. Pepper
  19. Nutmeg
  20. Port & cognac
  21. & mix well
  22. Place meat mixture in prepared pan
  23. & top with rosemary
  24. Then bake 30 minutes
  25. Reduce heat to 400 degrees f & bake another 15 minutes
  26. Remove from oven & let rest 10 minutes before serving
