  1. Preheat oven to 325f
  2. Place butter in an uncovered roasting pan and place in oven to melt
  3. Sprinkle meat with salt and pepper
  4. Roll in flour
  5. Then beaten eggs
  6. Then cracker crumbs
  7. Place meat in roaster and add onion and bay leaf
  8. Bake for 1 1 / 2 to 2 hours or until tender
  9. Basting frequently
