this serves 4 as an entree.

  1. In medium saucepan
  2. Melt butter
  3. Blend in the 1 / 3 cup flour
  4. Add the 1 1 / 2 cups milk all at once
  5. Cook and stir until thickened
  6. Add pepper and nutmeg
  7. Stir about 1 / 2 cup hot mixture into egg yolks
  8. Return to hot mixture
  9. Cook and stir 10 minutes
  10. Add cheese
  11. Stir until smooth
  12. Spread cheese mixture in lightly greased 11x7x1 1 / 2 inch baking pan
  13. Chill until firm
  14. Cut chilled mixture into 12 portions
  15. In small bowl
  16. Beat together the 2 eggs and the 1 / 2 cup milk
  17. Roll cheese croquettes carefully in the 1 / 2 cup flour
  18. Dip in egg mixture
  19. Then roll in crumbs to coat
  20. Deep fry in oil heated to 375 until golden
  21. 2 to 3 minutes
  22. Drain
