this recipe is my own version, modeled after my own apple pie. usually, this is made using ingredient amounts that basically include a pinch and a dash, a squeeze and a scosh. finally, i made myself slow down and kind of measure everything out so that i could post it here. these are, of course, approximate. i've written this to make four individual crisps, the way we eat it, but if you want to make one big crisp, just add 10 minutes to the baking time. i don't use nuts, but if you want to add some nuts such as pecans to the topping, just replace about a 1/4 cup of the oats with them. also, i'm not a huge fan of very sweet desserts - this even pushes the limits for me. if you prefer sweeter desserts, increase the sugars in the filling to your taste.

Steps

  1. Preheat the oven to 375f butter 4 individual casserole dishes
  2. I often forget the butter
  3. No biggie
  4. I love to cook
  5. But hate doing dishes
  6. So i make this all in one pot
  7. In a medium pot combine apples and lemon juice and toss well to coat
  8. Add in the rest of the filling ingredients
  9. Brown sugar
  10. White sugar
  11. Flour
  12. Cinnamon
  13. Nutmeg
  14. And cloves
  15. Stir well to combine
  16. Breaking up any lumps of sugar or flour
  17. Pour equal amounts of apple mixture into the four casseroles
  18. They should be about half full
  19. Set aside
  20. In the same pan melt the butter over medium lo heat
  21. Once butter is melted
  22. Turn off heat
  23. "add in remaining topping ingredients: oats
  24. Flour
  25. Brown sugar
  26. Cinnamon
  27. Salt
  28. And nuts if youre using them"
  29. Stir to combine well
  30. Again
  31. Breaking up any obvious lumps of sugar or flour
  32. The topping should not be "wet"
  33. But if it seems too dry
  34. And the butter does not seem to have coated all of the oats
  35. Then add in an additional tablespoon of butter
  36. "it wont hurt anything"
  37. Pour mixture equally over the apples in each dish
  38. They should be almost full
  39. But not overflowing
  40. Place the dishes on a cookie sheet
  41. Just in case the filling does overflow
  42. Bake for 30 minutes
  43. Allow to cool
  44. Serve with milk
  45. Whipped cream
  46. Or vanilla ice cream
