  1. Use just enough vegetable oil to completely cover beignets while frying
  2. Using a mixer with a dough hook
  3. Place water
  4. Sugar
  5. Salt
  6. Egg
  7. Butter
  8. Evaporated milk
  9. Flour
  10. And yeast in the bowl
  11. Beat until smooth
  12. If using a bread machine
  13. Select dough setting and press start
  14. When dough cycle has finished
  15. Remove dough from pan and turn out onto a lightly oiled surface
  16. Form dough into an oval
  17. Place in a lightly greased bowl
  18. Cover with plastic wrap
  19. And refrigerate until well chilled or overnight
  20. To prepare dough
  21. Remove from
  22. Refrigerator and roll out on a lightly
  23. Floured board to 1 / 2-inch thickness
  24. Cut into approximately 3-inch squares or circles
  25. In a deep fryer or large pot
  26. Heat vegetable oil to 360 degrees f
  27. Fry the beignets 2 to 3 minutes or until they are puffed and golden brown on both sides
  28. Turning them in the oil with tongs once or twice to get them evenly brown
  29. Beignets will rise to the surface of the oil as soon as they begin to puff
  30. Remove from oil and drain on paper towels
  31. Then sprinkle heavily with powdered sugar
  32. Serve hot
  33. The dough can be kept for up to a week in the refrigerator - it actually improves with age
  34. Just punch down when it rises
  35. Dough can also be frozen

  37. Or shape doughnuts before freezing
