from the chicago tribune magazine. the author adapted this recipe to introduce a young child to ethnic food other than pizza and spaghetti. it is a very mild curry, and my problem adult eater really enjoyed it. tasty and colorful, it's fast andeasy to whip up.

Steps

  1. In a large skillet
  2. Heat vegetable oil over medium heat
  3. Add onion
  4. Garlic and salt
  5. Cook
  6. Stirring
  7. Until softened
  8. 7 minutes
  9. Add curry powder and cook
  10. Stirring
  11. 1 minute
  12. Stir in coconut milk
  13. Tomatoes
  14. And tomato paste
  15. Cook
  16. Stirring occasionally
  17. Until thickened
  18. 10 minutes
  19. Add chicken and simmer until cooked through
  20. 6 minutes
  21. Turn off heat
  22. Add the spinach and stir until wilted
  23. 1 minute
  24. Serve hot over rice
