  1. Wear rubber gloves when handling beets ! trim beet greens and wash well
  2. Place in 2 1 / 2 qt saucepan and cover with water
  3. Bring to boil
  4. Reduce heat and cook 25-40 minutes until tender
  5. Drain and let cool until you can handle them
  6. Peel beets and cut into slices or wedges
  7. Stir together mustard
  8. Vinegar
  9. Oil
  10. And tarragon
  11. Pour over beets
  12. Season with salt and pepper
  13. Toss and serve hot or at room temperature
