beetroot chocolate cake


i like using this recipe because it never fails and i can convince myself that is a 'healthy' chocolate cake!

  1. Boil unpeeled beetroot for 1 hour
  2. Drain
  3. Peel
  4. Cool and puree beetroot to make 1 cups of pureed beetroot
  5. Preheat the oven to 180c lightly oil and flour a 25 cm cake tin
  6. Place flour
  7. Sugar
  8. Cocoa
  9. And baking powder in a large bowl
  10. And mix thoroughly
  11. Add the chopped nuts if using
  12. In another bowl
  13. Mix oil
  14. Eggs
  15. And beetroot
  16. Fold into the dry ingredients with melted chocolate
  17. Place in cake tin
  18. Bake 45-55 minutes
  19. Turn out onto rack and cool
  20. Served slightly warm with fresh cream makes a delicious dessert
