  1. Boil the beets until tender
  2. When beets are cool enough to handle
  3. Peel
  4. Dice
  5. And place in a salad bowl
  6. Stir in garlic
  7. Cilantro
  8. Chives
  9. Olive oil
  10. Vinegar
  11. Salt and pepper
  12. Chill for at least 1 hour
  13. Stir
  14. Sprinkle with parsley and serve
