beet risotto with goat cheese and walnuts


this is a beautiful ruby colored dish. creamy, tart and crunchy.

  1. Heat oil in a dutch oven over medium-high heat
  2. Add onion
  3. Saute 3 minutes
  4. Add rice
  5. Ginger
  6. And rosemary
  7. Saute 1 minute
  8. Add wine
  9. Cook 3 minutes or until liquid is nearly absorbed
  10. Stirring constantly
  11. Add beets
  12. Water
  13. Salt
  14. And broth
  15. Bring to a boil
  16. Cover
  17. Reduce heat
  18. And simmer 20 minutes or until beets are tender
  19. Stirring occasionally
  20. Add cheese
  21. Stirring until blended
  22. Sprinkle each serving with 1 tablespoon walnuts
