this jam keeps for quite a long time and is a wonderful gift for friends.

  1. Wash and peel the beets
  2. Put them through a meat grinder or grate them
  3. In a pot
  4. Barely cover them with water and cook them slowly until they are tender
  5. Add the sugar
  6. The ginger
  7. The lemon juice and rind
  8. Cook until thick and clear
  9. Which will take about an hour
  10. Add the chopped nuts
  11. Makes about 3 quarts
