  1. Preheat oven to 400f
  2. Rub beets in oil
  3. Wrap in foil& roast for an hour or until fork tender in the center
  4. Remove from foil& cool
  5. "peel skins from beets by just rubbing with your fingers- don some rubber gloves unless you dont mind red fingers !"
  6. Slice the beets into rounds about an inch thick
  7. Using a small heart-shaped cookie cutter
  8. Cut into each beet slice
  9. Transfer slices to individual serving plates
  10. Top with crumbled chevre& garnish with chives
