  1. Wash the greens thoroughly several times in deep water
  2. Cook in very little boiling salted water until just tender
  3. A few minutes
  4. Drain thoroughly
  5. Season with salt
  6. Pepper
  7. Vinegar and butter
  8. Garnish with sliced eggs over the top
