  1. Heat a medium skillet over medium heat
  2. Add 1 tablespoon of the butter
  3. The onion
  4. Jalapeno and garlic
  5. Cook
  6. Stirring occasionally
  7. Until the vegetables soften and begin to caramelize
  8. About 20 minutes
  9. Remove from the heat
  10. Heat 1 tablespoon of the butter in a large saucepan over medium heat
  11. Add the chorizo and cook
  12. Breaking it up with the side of a spoon
  13. Until well browned
  14. About 5 minutes
  15. Add to the cooked vegetables in the skillet using a slotted spoon
  16. Set aside
  17. Wipe out the saucepan the chorizo cooked in and return it to medium heat
  18. Add the remaining 2 tablespoons butter
  19. When the butter has stopped foaming
  20. Stir in the flour
  21. Chili powder
  22. And cumin and stir until the flour is absorbed
  23. Whisk in the beer and milk
  24. Bring to a simmer and cook
  25. Stirring frequently
  26. Until slightly thickened
  27. About 5 minutes
  28. Remove from the heat and stir in the cheese
  29. Stirring until completely melted
  30. Transfer the cheese deep to a warmed serving dish
  31. Fondue pot or a small slow cooker set to warm or low
  32. Stir the chopped cilantro leaves into the chorizo-onion mixture and dollop it on top of the melted cheese
  33. Garnish with more cilantro leaves
  34. Serve with tortilla chips
