  1. Prick each sausage in several places with
  2. "pour beer into bottom of pan fitted with steaming rack or basket
  3. Making sure beer doesnt cover rack
  4. And heat beer to boiling"
  5. Adjust heat to maintain gentle boil and place sausages on rack
  6. Steam covered until sausages are firm to the touch and just cooked through
  7. 6-8 minutes
  8. Remove from heat and transfer to paper towels
  9. About 10 minutes before serving
  10. Heat butter and oil in large heavy skillet
  11. Pat sausages dry and place in skillet
  12. Saute
  13. Turning with tongs
  14. Until well browned on all sides
  15. About 10 minutes
  16. Cut sausages diagonally into 3 or 4 pieces each
  17. Serve hot with cornichons
  18. Onions
  19. And mustard
