flavorful, moist and delicious! those are the results you'll get with brining—give it a try. i found this recipe at betty crocker site. you can cook this in the oven as the directions state or cook it on the grill. could even cook it using the beer-can chicken method on the grill or the oven, for even moister chicken.

Steps

  1. Line 2-quart bowl or saucepan with 2-gallon resealable food-storage plastic bag
  2. Add water
  3. Kosher salt and brown sugar
  4. Stir until salt and sugar are dissolved
  5. Stir in beer
  6. Add chicken
  7. Tightly seal bag
  8. Refrigerate at least 8 hours but no longer than 24 hours
  9. Line 13x9-inch pan with foil
  10. Remove chicken from brine
  11. Rinse thoroughly under cool running water and pat dry with paper towels
  12. Discard brine
  13. Place chicken
  14. Breast side up
  15. In pan
  16. Refrigerate uncovered 1 hour to dry chicken skin
  17. Meanwhile
  18. In small bowl
  19. Mix all rub ingredients except oil
  20. Set aside
  21. Heat oven to 375f brush oil over chicken
  22. Sprinkle with seasoning mixture
  23. Rub into chicken skin
  24. Bake 1 hour 15 minutes to 1 hour 30 minutes or until juice of chicken is clear when thickest piece is cut to bone
  25. Let stand 15 minutes for easiest carving
  26. Time-saver
  27. You can skip the step of refrigerating the brined chicken 1 hour to dry the skin
