beer braised short ribs


this recipe is from a private chef in boston. her name is christine todaro. it was published in a local boston paper. i have tried it, and it is to die for. hope you enjoy it.

  1. Preheat oven to 300 degrees
  2. Season short ribs with salt and pepper
  3. Set aside
  4. Heat a heavy roasting pan with 3 tbsps
  5. Olive oil over medium high heat
  6. Brown the beef on all on all sides to seal in juices
  7. Transfer seared ribs to a plate
  8. Add 1 tablespoons olive oil to the pan
  9. Lower heat to medium
  10. Add carrots
  11. Onions
  12. Celery and garlic
  13. Saute 7-10 mins
  14. Stirring occasionally
  15. Add beer
  16. Tomatoes and mustard
  17. Increase heat to high
  18. Then nestle the ribs in the sauce
  19. Cover pan tightly with aluminum foil
  20. Bake 3-4 hours
  21. Remove from oven
  22. Skim off top layer of grease
  23. Serve with noodles
  24. Rice
  25. And some nice crusty bread
