  1. Heat vegetable oil in deep fryer or heavy saucepan to 375
  2. Oil should be about 1 1 / 2 inches deep
  3. Prepare cajun dipping sauce by stirring until all ingredients are blended
  4. Set aside
  5. Toss onion rings and 1 / 4 cup bisquick
  6. Stir remaining 2 cups bisquick
  7. Beer
  8. Salt and eggs until smooth
  9. Dip onion rings
  10. A few at a time
  11. Into batter
  12. Fry about 2 minutes
  13. Turning each ring after 1 minute
  14. Until golden brown
  15. Drain well
  16. Serve hot with cajun dipping sauce
