this dish is based on umami, which is popularly referred to as savoriness. it is one of the five basic tastes together with sweet, sour, bitter, and salty. marinade for at least 1 hour, but up to 24 hours. from npr.

Steps

  1. For the marinade
  2. Whisk together soy sauce
  3. Beer
  4. Garlic
  5. Sugar
  6. 2 tablespoons lime juice
  7. Sriracha and sesame oil in a large bowl
  8. Add meat and toss to coat
  9. Let sit at room temperature 1 hour or refrigerate covered up to 24 hours
  10. To prepare condiments
  11. Toss carrot with remaining lime juice and salt in a small bowl and set aside
  12. Place peppers
  13. Green onions
  14. Mint
  15. Cilantro
  16. Sesame seeds
  17. Sriracha and rice in individual serving bowls
  18. Arrange lettuce on a platter
  19. To prepare the steak: heat peanut or vegetable oil in a skillet or grill pan over medium-high heat
  20. Add beef strips in batches in one layer without overcrowding
  21. Brown on both sides
  22. Transfer to a platter and keep warm
  23. Once all the beef has been browned
  24. Pour the remaining marinade and any collected meat juices into the skillet
  25. Bring to a boil
  26. Scraping up any bits and reduce until somewhat thickened
  27. Pour into a small bowl
  28. To serve
  29. Top a lettuce leaf with a few spoonfuls of rice
  30. 1-2 meat strips
  31. And a spoonful of the marinade reduction
  32. Sprinkle with the other condiments and drizzle with sriracha
  33. Roll up and eat
