from the cookbook the gourmet's guide to cooking with beer by alison boteler. i left the bacon out when i made it, but i definitely think it would have added something extra. i used reduced fat cheddar cheese and it was delish.

Steps

  1. Preheat oven to 350f grease a 9x5-in loaf pan
  2. In a medium bowl
  3. Blend together flour
  4. Cornmeal
  5. Sugar
  6. Baking powder
  7. Baking soda
  8. And salt
  9. In a separate bowl
  10. Beat together eggs
  11. Olive oil
  12. Cheese
  13. And bacon
  14. Slowly blend wet ingredients into dry ingredients
  15. Mixing just until blended
  16. Batter should be lumpy
  17. Do not overmix
  18. Pour into prepared pan and bake 45 min-1 hour
  19. Or until a toothpick inserted comes out clean
  20. Cool in pan for 15 minutes and then invert over rack and remove from pan
