beer bacon onion braised new potatoes


simple, great flavor, savory and just a fantastic easy recipe. a simple pot of bacon, herbs, onions and potatoes, just slow cooked. true comfort food. serve this with a slow cooked pork roast, slow cooked short ribs, or baked chicken; these are just my favorites. if you want, cut the recipe in half for just the two of you.

  1. Bacon and onions -- in a large sauce pan
  2. Add the butter and bacon and saute until the bacon starts to render some of the drippings
  3. Just a couple of minutes on medium low heat
  4. "you dont want the bacon to crisp up"
  5. Then add in the onions
  6. Garlic
  7. Herbs and stir another couple of minutes
  8. Potatoes and beer -- if you are using bigger potatoes
  9. You may want to cut them in quarters
  10. Add in the potatoes and toss well to combine all the flavors
  11. Then add in a pinch of salt
  12. Pepper and the beer
  13. Go easy on the salt and pepper as you can re-season once the dish is cooked
  14. It will take about 30 minutes
  15. Covered
  16. But i like to vent the lid just a bit so some of the liquid will evaporate
  17. Cook until the potatoes are tender
  18. Once tender
  19. Re-check if you need to add any additional salt and pepper
  20. And again
  21. Cooking time can vary
  22. Remember this depends on the size of your pot
  23. And most importantly on the size of the potatoes
  24. The time is not set in stone as this can vary
  25. Serve -- just serve the potatoes with the sauce in a large bowl and make sure you give them a big spoon so they can add some of the sauce over the potatoes
  26. Garnish with fresh parsley
  27. Enjoy !
