  1. Peel the cucumber
  2. Cut it in half lengthwise and remove the seeds and pulp with a teaspoon
  3. Cut each half into 1 / 4-inch slices
  4. Melt the butter in a fairly wide-based pan
  5. Add the onion and garlic and cook
  6. For a few minutes
  7. Until tender
  8. Add the cucumber slices
  9. Cover and toss frequently over a low heat for about 3 minutes
  10. Add the cream and season lightly with salt and pepper
  11. Cook for a few minutes longer
  12. But take care not to over-cook the cucumbers
  13. Which should still be crisp when served
  14. Add the freshly chopped herbs just before serving
