this was the wedding cake paula deen used for her wedding. this recipe is not formulated for a wedding cake, but for a normal size everyone can use. increase as needed if you are making tiered or extra large cakes.

Steps

  1. Butter and flour 3 round cake pans
  2. Set aside
  3. Preheat oven to 350f
  4. For cake: in a mixing bowl
  5. Stir together the flour
  6. Sugar
  7. Baking soda
  8. Cinnamon
  9. And salt
  10. Add the eggs and oil and stir just until the dry ingredients are moistened
  11. Do not beat
  12. Stir in the banana
  13. Pecans
  14. And vanilla
  15. Divide the batter among the prepared pans and bake for 23 to 28 minutes
  16. Or until a wooden pick inserted in the center comes out clean
  17. Cool the cake layers in the pans for 10 minutes
  18. And then turn them out onto a rack to cool completely
  19. While the cake cools
  20. Make the frosting: in a bowl
  21. Blend together the cream cheese and butter
  22. "gradually add the confectioners sugar and beat until light and fluffy"
  23. Beat in the vanilla
  24. Stir in the pecans
  25. Or reserve them to sprinkle over the frosted cake
  26. Fill and frost the cake when it is completely cool
