buckley s cajun salmon pasta


this is another hit from my uncle's restaurant. it is a simply elegant dish, & although it takes time, it will be worth the praise you get!

  1. For the cream sauce:
  2. Saut minced garlic with butter until garlic is light brown
  3. Add heavy cream
  4. Basil
  5. Lemon juice
  6. Grated cheese blend
  7. & white pepper
  8. Bring to a boil on medium high heat
  9. Stirring often
  10. Place on low heat after boiling & salt to taste
  11. For the cajun salmon:
  12. Preheat oven to 375f
  13. Lightly coat salmon with cajun spice
  14. Remember
  15. The amount of spice will determine the degree of spice & heat
  16. So cook salmon at 375f for 8-15 minutes depending on desired doneness
  17. For the presentation:
  18. Toss cooked pasta with the cream sauce
  19. Portion 8 ounces of pasta per serving
  20. Place the cooked salmon filets atop the portions
  21. Garnish with parsley & shredded parmesan cheese
  22. A slice of garlic toast & a lemon wedge will further complement this dish
