a friend of mine and i once made this from a recipe we found in a cooking magazine, but lost the recipe. i found it again, so i'm putting it here so as not to lose it again. it calls for ciabatta bread, but anything light with a good crunchy crust will be as good. it's also great grilled panini-style.

Steps

  1. Salt and pepper chicken breasts
  2. Heat olive oil in a nonstick skillet over medium high heat
  3. Cook chicken until no longer pink
  4. About 4-5 minutes per side
  5. Remove chicken
  6. Keep warm
  7. Add wine
  8. Sugar
  9. And vinegar to pan
  10. Increase heat to high
  11. Reduce until thick and syrupy
  12. Cut rolls in half
  13. Spread with goat cheese
  14. Add chicken
  15. Spinach
  16. Onion
  17. Peppers
  18. And sauce
  19. You may have sauce left over
  20. Save it
  21. "its great on steaks
  22. Too"
