  1. Preheat oven to 400f and bake potatoes for 1 hour
  2. Allow potatoes to cool 10-15 minutes
  3. Cut potatoes in half and scoop out flesh and place in a medium bowl
  4. Put potato skins aside
  5. Add sour cream
  6. Butter
  7. Milk
  8. Half of the bacon
  9. 1 / 2 of the cheese and 1 / 2 of the green onions to the potato flesh and mix well
  10. I do use my hand mixer
  11. But be very careful not to overmix as it will turn pasty
  12. Scoop potato mixture back into the skins and top with remaining bacon
  13. Cheese and onions
  14. Bake at 350f for 20 minutes if baking right away
  15. If you are making ahead then they should bake longer- about 30-40 minutes
