  1. Peel and shred potatoes
  2. In a large bowl
  3. Beat eggs
  4. Stir in potatoes
  5. Onions and spices
  6. Sprinkle flour over top and stir in
  7. Melt enough shortening in a large heavy fry pan and heat
  8. Measure out about 1 / 4 cup potato mixture for each pancake
  9. Flatten slightly to make a thin pancake
  10. Fry slowly
  11. Turning once
  12. 3 to 5 minutes
  13. Or until crisp and golden
